RECIPE: Frozen fruity pops

Fruit treats – there's a carrot in my pinata

Melting in this weather? In need of cold things, constantly, to retain some sense of sanity? We’ve got your insides covered with this simple-as recipe for frozen fruity treats, taken from lovely wholefood recipe book ‘There’s a Carrot in my Pinata’– we suggest whipping them up then finding shade, a breeze and someone to fan you, stat.

Ingredients

Makes six pops.

320 g (1 ⅓ cup) natural yogurt*
150 g (1 cup) assorted fruit, cut into small pieces
25 g (  cup) granola**
2 tbsp maple syrup
2 tsp vanilla extract

Method

Mix together the natural yogurt, vanilla extract, and 1 tablespoon of maple syrup in a bowl until combined.

Layer the icy-pole moulds with yogurt and your fruits of choice, alternating between the two until the mould is almost full. Top with a layer of granola and a drizzle of maple syrup which will help the granola to stick. Freeze for at least two hours.

*Try Greek-style yogurt for extra creaminess.
